How Ingredient Weight Conversions Work
Volume describes the space an ingredient occupies; grams describe its mass. A cup of one ingredient does not have the same weight as a cup of another.
For example, the stored reference for all-purpose flour is 120 g per US cup. The model gives 7.5 g per US tablespoon and 2.5 g per US teaspoon. These are equivalent portions of one adopted reference, not three independently measured weights.

Understanding Ingredient Weight Variations
Packing, moisture, composition and particle size can change how much ingredient fits in a measure. Chopped, grated, sifted or melted ingredients may fill the same volume differently. Follow the preparation specified by your recipe and any qualification in the ingredient name or source note.
The stored cup weight may come from a chart, a scaled serving weight or an approximation. “High” and “medium” are recorded confidence labels; they do not certify a universal value or provide a numerical uncertainty.
